How are you teaching baristas to connect origin and roast profile to their espresso choices, instead of defaulting to a house recipe? Last Thursday in our roastery I ran Ethiopia Guji natural (Agtron 65, 18% DTR) against Colombia Huila washed (Agtron 58, 22% DTR) on a Linea PB; the Guji sang at 18 g in/36 g out with 7 s preinfusion, while the Huila tightened up with a finer grind and shorter ratio — what cues and numbers do you emphasize so they taste the roaster’s intent?
I have them ditch the “house recipe” for the first few shots and run a mini matrix: naturals/shorter DTRs get 5–8 s preinfusion at about 1:2, washed/longer DTRs get +1°C and about 1:2.3, then we taste and lock it — like swapping presets for a dial. Small caveat: baskets and water nudge this a lot, so we log what moved the Guji at 18/36 versus the Huila and build a simple decision tree per site. I also have them predict the starting point from dry aroma and cupping notes before touching the grinder.
I coach my crew to anchor by first-drip time: aim for drops at about 7–8 s on fruity naturals with a gentle ramp, but push for about 4–5 s and +0.5 to +1°C on denser washed lots; caveat — if a natural feels hyper-soluble, shorten PI to keep it lively. The mantra is, “If the puck blooms big, give it space; if it resists, give it heat.” Have you tried logging first-drip time beside Agtron/DTR so newer baristas see the pattern?
